Dena's Chicken Salad

My chicken salad starts with:

6 boneless skinless meaty breasts of chicken

seasoned with salt, pepper, onion powder and garlic powder(very light) and extra virgin olive oil
season both sides.
place in a glass Pyrex dish lined with foil.
bake for 1 hour
when done remove from pan place on a paper towel lined plate and let cool.

while they are cooling.

Get a big bowl

you will also need

2 large cucumbers
3 stalks of scallions
4 stalks of celery

start with your celery
clean it well make sure no strings are left
make a course dice of all 4 stalks and add it to the bowl

next the cucumbers
peel them  and slice
after slicing cute the cucumbers into match stick cuts
place those in the bowl

next the scallions

trim the tops and ends
and cut thinly
and them into the bowl

mix the veggies together

season with salt and pepper to taste

by this time the chicken will be cool

slice the chicken in nice medium thickness slices
after then cut those slices in half and add them to the bowl

2 1/4 cups (or to taste) Hellman's Mayo (this is the key to the taste)

stir and make sure all the ingredients are covered.

Transfer into another bowl and refrigerate for at least 1 hour or more to make sure the flavors marry.

Serve!!!! On your favorite breads my is a fresh croissant!!!
